About me
I’m Lilo Rosen, and Lilo’s Pâtisserie is my new project.
After completing my training as a pastry chef at the renowned Aachen-based pastry shop Middelberg, I moved to Berlin for several years, where I worked as a pâtissière at the Hotel Adlon before joining Anna Plagens, a student of the famous French pastry chef Pierre Hermé, at her pâtisserie “Du Bonheur” on Brunnenstrasse. Anna gave me an in-depth introduction to the art of haute pâtisserie française.
At the end of 2016, I set off on a multi-month journey through Southeast Asia. Back in the spring of 2017, I started the master craftsman course in Berlin, which I completed with my master craftsman title at the end of 2017. After that, I began preparing to become self-employed. I wanted to build my own business that combines German and French craftsmanship and brings together the best of both sweet worlds. But where? In Berlin with its extremely vibrant scene and numerous start-ups? I finally decided to return to my roots, to my parents' farm in Belgium not far from Aachen, Liège, and Maastricht.
Since 2018, here, between two villages and surrounded by greenery, I have been building a pastry workshop, my own café, and a guesthouse. I have set quite a few goals for myself, as I am also raising my own family at the same time. All of this takes time, a lot of energy, and also a lot of money. Until we are ready, I offer my creations online through this website. It is worth trying!
My work focuses on the artisanal and mindful production of cakes, tartlets and fine pastries, baked goods, fine chocolate and fine marzipan. In addition to prioritizing local suppliers and products from my own farm, I mainly use organically and fairly produced ingredients.
